No guilty delicious Chicken Parmigiana...oven cooked step by step....
1- Cut and flat a big chicken breast in two ...cover with mayo and then with a mix a bread crumbs, Italian seasoning and paprika
2- bake in 350 preheat oven for 15 min. then broil for 5 min to brown the top of chicken
3- take chicken out, cover with cooked tomato sauce, parmesan cheese and shredded mozzarella or other cheese. and put back in the oven for few seconds until cheese is melted.
Take the chicken out and sprinkle it with Italian seasoning.
2- bake in 350 preheat oven for 15 min. then broil for 5 min to brown the top of chicken

My Italian bread
In a bowl mix 2 cups of warm water,1TBS yeast,1TBS honey,1TBS oil, pinch o2 of salt...4 cups of bread white flour, 1 cup of wheat flour and 2 tsp of wheat gluten(the secret).With a big spoon work the mix …then with your hand and wrist work the mix some more until it shapes in to a ball(add more flour if needed).Cover the bowl with a clean rug and put it in a worm place(I put it in the oven not on!)After one hour work the dough again and put back in the oven not on!. Wait about another hour and then gently transfer the raised dough in a pizza pan and bake at in a preheat oven at 400 F. for 30 min. Let bread cool on a rack for few hours. I keep it in a dish on the table covered just with a clean rug because it doesn't least too long with my family !

Cherry me up “Tiramisú”
MY version of tiramisu' for no evening coffee♥ In a glass pan layer 8 lady fingers sponged in maraschino cherry juice (optional for adults add a TBS of STREGA liquor)Cover with a creamed 8 oz cream cheese (in a blender whip cream cheese with a banana and a little milk) Layer another 8 sponged lady fingers and more creamed cream cheese. Cover with grated chocolate and garnish with maraschino cherries. Refrigerate for few hours. Pizza with escarole
Wash and cut off the tough pieces of the escarole. Cut the washed escarole in small pieces and sauté them for few min. in a frying pan with olive oil, minced garlic and pitted black olive. In a baking pan stretch pieces of raised dough (the same recipe for pizza) .............................................. fill with the cooled escarole mixture... cover with another piece of dough. Bake at 375 degree F. for 25/30 min. or until crust becomes golden brown… Parmigiana made with eggplants or squashes♥
Long yellow Squash Parmigiana is just good like eggplant parmigiana and squashes don't need to be salted.Deep sliced squashes in flour and then pass them in bitten eggs. Fry the slices in vegetable oil, when gold on side turn them on the other side.Place on a paper towel to absorb oil………… In a baking pan assemble the parmigiana in layers: quashes slices, tomato sauce, grated Parmesan cheese and shredded mozzarella. Repeat and Cover last layer with sauce and Parmesan cheese and a small amount of mozzarella. Cover with aluminum foil and bake at 350°F. For 30 minutes.. Caponata
La caponata In Naples and in other parts of Italy has many versions, but basically it is a medley dish of sauté' vegetables usually served cold and as a side dish. We Neapolitan love to mix our past dish with vegetables... therefore why not mix the Caponata with pasta? Mix with cooked pasta (olive and cappers optional) and cover with Ragu'(tomato sauce) and parmesan cheese. |

Italian Eggplant recipes ♥
Stuffed Eggplants Cut 4 eggplants in half and scoop the flesh out...in a pan saute 1 chopped onion...add the mashed eggplant flesh, 8 oz chopped tomatoes, parsley and salt to taste and cook the mixture for few min. Then fill the eggplant shells wit mixture, cover with shredded mozzarella and bake them at 350for 20 min or until golden brown. Eggplants...the slippers recipe In Naples they call this recipe "melanzane a scarpone" which means that the eggplants look like slippers because they are cut in 2 lengthwise and stuffed with the mixture of saute eggplant flesh, black olives, capers, breadcrumbs, chopped tomatoes, basil and salt to taste and the baked for 15.20 min at low temp. Eggplants looking like mushroom This recipe in Naples is called "a fungetielle"being funghetti small mushroom...the eggplants after are saute in small pieces in olive oil and garlic...they look like small mushroom....and they are delicious. They can be added to a tomato sauce and served with pasta and Parmesan cheese! Eggplants 'a scapece" "A scapece" are called vegetables marinated with vinegar. For 2 or 3 medium eggplant cut in small pieces boiled, drained and squeezed... add 2 TBS of balsamic vinegar,1 minced garlic, parsley,oregano and olive oil...and then toss in a bowl garnishing with "red peperoncino"(minced red peppers) Eggplants spread for bruschetta In 2 TBS live oil saute a shredded onion and 1 or 2 eggplants cut in small pieces and 1 celery stalk also cut in small pieces...add 2 or 3 TBS of white wine or broth and cook until liquid is absorbed...spread on bruschetta.( Italian pronounce it brusketta) scroll down for ZEPPOLE......recipe like mom used to make on in Naples, Italy on San Joseph day March 19♥ Italian style birthday Cake recipe Preheat oven to 350 F and grease and flour two deep 8" round cake pans. In the bowl using an electric mixer cream together 1/2 cup unsalted butter, ½ cup veg.oil and 1 1/2 cup sugar. Add and beat 4 eggs, one at a time. Add 1 Tablespoon vanilla extract,in a separate bowl, whisk together 3 cups all-purpose, 1 Tablespoon baking powder, and 1/2 teaspoon salt. Then mix flour mixture and 1 1/4 cup buttermilk to the butter mixture…until smooth. Divide batter into cake pans, and bake on 350 F for 30-35 minutes. When the cake is done, a toothpick inserted in the center should come out clean. Cool cake pans for 10-15 minutes before inverting onto a dish and before frosting.( or use a commercial mix) Frost cake using chocolate frosting and decorate with chopped almond or other nuts (other Options: moist the cake with maraschino cherry juice and then instead to decorate with nuts decorate with maraschino cherries cut in 2 or other fruits) |
My Margherita style pizza...
the preparation of the dough is the same of my regular homemade pizza(scroll for dough recipe)...then I stretched a thin piece of the dough on top of a round pan( not in)put on it sauce, mozzarella and basil and bake in an already very hot oven( 550) for 8 min. and voila' 😋

Pastiera is an Italian traditional pie for Easter or anytime.(it's so good that in Italy there are bakeries that just make pastiera all the time)
...try my light recipe :In a pan warm up and cook stirring constantly at low heat for 15 minutes 1 cup milk, a 14 oz can f cooked wheat, 1/3 cup sugar, pinch of salt, 1 teaspoon of grated lemon peel. Let cool it. Meanwhile prepare the ricotta mixture.
In a large bowl mix until obtain a smooth mixture: 16 oz ricotta, 4 eggs,1(or 2 if you like it sweeter) cup of sugar, a teaspoon of vanilla and a TBS of orange juice (In Naples we use something called water of orange or millefiori (thousand flowers)+ 8 oz of citrons. Add the cooled cooked wheat mixture and mix well.
Pour in to a pie shell( I stretch the pie shell with the rolling pin to obtain a thinner shell) and cover with criss-cross strips( cut from the leftover of the pie shell) (this mixture makes at least 2 pies)
Bake at 350° F for 1 hour or until the pie will acquire a gold-amber color'.

(making my own giving the Price of good bread):In a large bowl, mix 3 cups warm water (110 degrees F), 2(.25 ounce) packages active dry yeast, and 1/3 cup sugar or honey +3 tablespoons melted butter or 1 tablespoon of olive oil, and 1/2 tablespoon salt . Add 3 cups white bread flour and 2 cups of whole wheat flour... stir to combine. If you don’t have a flat surface to knead… knead it INSIDE the bowl with your hand (hold the bowl with one hand and knead with the other. Place in a greased bowl, turning to coat the dough. Cover with a dishtowel. Let rise in a warm place until doubled. Punch down, and divide into 2 loaves. Place in greased bread loaf pans, and allow rising until dough has topped the pans by one inch. Bake at 375 degrees F for 25 to 30 minutes; do not over bake. Lightly brush the tops of loaves with 2 tablespoons melted butter or margarine when done to prevent crust from getting hard. Cool and save it in bread plastic bread.

Sunday Lasagna Cook 1 pound lasagna noodles following the package directions. …Have the tomato sauce and stuffing ready: ricotta, shredded mozzarella, cubed ham, crumbled sausages or meatballs, parmesan cheese. In a large and long baking pan layer the lasagna in this order: Lasagna noodles-sauce--ricotta--mozzarella--ham--meat--parmesan cheese-sauce…. Repeat. Make at least 3 layers. Cover the last layer of lasagna just with sauce, parmesan cheese and some shredded mozzarella. Cover with aluminum foil and bake for 40 minutes at 350° degree. F. *** other way to prepare lasagna is to mix the stuffing and then spread it between the Layers of lasagna. The lasagna can be made also with pasta called Mafaldine. |
Peppers and potatoes . .sauteed not fried.......mmmm...boil 3 or 4 potatoes...then let cool and cut them in pieces, set apart...in small amount of veg,oil saute(at medium-low heat) 3 or 4 cut peppers...when almost cooked add the potatoes to the peppers and cook them until they get a golden color .😋😋 Struffoli is a traditional Christmas Dessert ☺ They are little pieces of sweet dough fried and then passed in honey and sprinkled with jimmies and they are like cherries… when you take one with your fingers, you can’t stop!...................... In a bowl mix 2 cups of flour, 2 eggs and a teaspoon of yeast.(add a few drops of water and then some flour to push the crumbly dough together) Make a ball and then cut it in small pieces. Transform these pieces with your hands in small sticks and cut them in 1/2 inch pieces. Put the pieces on a plate with a little flour so they don’t get stack to the dish. Let them rest for 30 minutes and then after shaking excess flour. fry in hot and abundant oil. Drain on paper towel. In another frying pan melt ¾ cup of honey, ¼ cup water and a teaspoon of sugar. Pour the struffoli in the honey mixture and turn them at low temp., until all the honey mixture sticks to the struffoli. Pour the struffoli in a large dish and with a fork adjust them in a ring shape. Decorate with red and green jimmies. In a large bowl beat 1/3 cup butter with an electric mixer…add and mix only 2/3 cup sugar, 2 teaspoons baking powder , ½ teaspoon salt…beat in 2 eggs, 3 teaspoons grated lemon peel and 1 teaspoon vanilla…gradually add 2 cups flour.Stir in 1 or 2 cups of finely crushed almonds. (Or chocolate chips)

Divide the dough in 2 equal portions and shape each portion into a roll. (They should look like cylinders) Place the rolls on lightly greased cookie sheets and gently flatten the rolls in 2 +1/2 inches.Bake a 375 oven for 25 minutes or until golden brown and tops are cracked.Let them cool for 30 minutes…then with a serrated knife cut each roll diagonally into 1 inch slices.Place slices cut side down on ungreased sheets and bake at 325 for 8 minutes. Turn slice over and bake for another 8 minutes. Let them cool before serving.

Quick bread Panettone
a quick version of the famous Italian Panettone… In a bowl combine 2 eggs, 1/2cup sugar, 1/2cup orange marmalade and 1/2 cup melted butter...add to flour mixture (2 cups flour, 1 and 1/2 tsp baking powder ,1/2 tsp baking soda)....Stir until moistened...fold in 1 cup candied fruits and 1cup raisins. BAKE (in a bread pan greased and floured)at 350 F. for 55min. or until a wooden toothpick inserted in the center comes out clean... remove from pan after few minutes and let it cool... store in bread bag. ***Optional: few hours before making it, soak the raisins and the candied fruits in brandy. |

The bread of our grandparents that will keep you regular!
ingredients:
2 pkg. active dry yeast/ 1 cup warm water 115 F degree / 1 ½ cups whole wheat stone ground flour / 2 tsp sugar( or honey) 2 tsp salt / 2 tbsp. olive oil / 1 ½ cups whole unbleached white flour.

Dissolve yeast in warm water in a bowl. Stir in oil, salt, and sugar. Add the flour slowly and knead until all the ingredients form a soft ball. Cover and put the bowl in a warm place and let it rise for 2 hours or more( I bake it the day after)Bake at 400 for 45/50 min. or until a knife inserted in the middle comes out clean. Store in a bread bag otherwise it become like a stone.
A great substitute for ice cream....
greek yogurt -10% fat...5 gr. sugar for 1 cup- with homemade strawberry sauce☺
How to make homemade strawberry sauce: Liquefy in a blender 1 or 2 cups of strawberries. Then cook and stir them in a pan at moderate heat until the sauce thickens.

"Quick eggplant or zucchini Parmigiana":
Saute in small amount( add more if necessary) olive oil cubed eggplant or zucchini 4 or 2( depends on how many serving you need)...then add cooked tomato sauce on top, Parmesan cheese and shredded mozzarella and let it cook for another 10 min at low temp.
My family loved so much that when I have no time to make a regular eggplant parmigiana, I make this in less then 20 min..

A change from the usual ham or other meat after the lasagna I cooked for New Year day (and after) a pork roast with peas just like I did in Italy.
I Put the roast in large baking pan with 1 cup of water and 2 meat flavor cubes and Italian seasoning on top, i cook at 450 for 30 min so gets the nice crusty look and then at 400 for 1 or 2 hours( it depend how big is the roast)After 1 hour I cut it in the middle to see if it is cooked...if it is still pink I cook it longer. When done, I add petite peas already cooked and leave it for a little in the oven to let the peas get the flavor and then I serve slices with the peas and a lot of Juice (I like my meat juicy or with sauce)

Since most Italians live in apartments...that's how I made barbecue flavored chicken:
In a baking pan mix 2 or 3 TBS of maple syrup or honey,1 Tbs mustard and 1 TBS ketchup...with chicken pieces. Bake'm at 370 F. for 1 hour( or until well cooked depending on the amount of chicken pieces) Remove from oven, put the chicken pieces in a dish and if there is still liquid in the pan reduce it cooking it on top of the stove for few min. and pour it on the chicken pieces.This recipe can be used also in the winter.

a Summer treat...get the recipe In a blander whip: 3 cups ricotta,
1 /2 cup brown sugar, 1 ripe banana and 1/2 cup cherries
1/4 cup coffee, ) chocolate and refrigerate for few hours Garnish with pitted cherry
post holidays blues... made a scrumptious birthday Italian style cake.Prepare a yellow box cake, cut in half, wet it with maraschino cherry juice and cover with frosting and maraschino cherries mashed in a blender. Cover with the other piece of the cake, spread the rest of frosting and decorate with the remaining maraschino cherry cut in 2...mamma mia!
Sfogliatelle and sfogliatelle pie “homemade” Sfogliatelle is a Neapolitan delicious pastry, but the outside made of many layers of dough is quite a complicate process to make, so I have improvised my own with this recipe. For the outside pastry I use a pie crust. If I make single sfogliatelle , I cut one pie crust in 4 and make cones that then I stuff with the filling. If I make a pie, I use 1 pie crust that I stretch with a rolling pin to obtain a thinner crust and make strips with the leftover to criss cross cover the pie…so I only make the filling. Filling recipe: Make the filling by placing 2 cups of milk, or almond milk ½ cup sugar or 2 table spoons of honey and pinch of salt in a pan. Bring up to the boil, then whisk in 1 cup of rice flour (substitute for semolina) until thickened and smooth. Transfer to a bowl to cool, and then beat in 2 cups of ricotta, 1/3 cup of cream cheese, 1 egg, 1 teaspoon vanilla, ½ cup of orange marmalade to create a smooth, thick cream. Transfer to the fridge to chill the filling. Use the filling to make single sfogliatelle or a pie. Bake at 450 F. for 20/25 min, check it if t is still pale bake for 2 or 3 min. or more...until desired amber color. Not Italian,but so good too♥ Irene’s turkey recipe Irene, an old tough lady with big heart and a friend’s mother-in law one year invited us for the Thanksgiving dinner. As Neapolitan I never was a great fan of turkey, but she made so tender and juicy that I asked for her recipe and since then I cook it like she did…and here it is the recipe: Pour a good beer over the turkey and bake covered at 375 for the time suggested on the bag. Uncover for last 10 min. to get the top golden brown. Then to make the gravy, mix the turkey liquid with some coffee for a darker color and some flour and seasoning. Her gravy was the best…no lumps and no greasy! And she did it mixing water and flour in a glass jar and shake very well and then mixing it with the rest of the turkey liquid. I liked so much that I pour it over the mashed potatoes, the stuffing and the rest. |
