lentils Nutrition Overview
Lentils are high in fibre, and complex carbohydrates, while low in fat and calories. Their high protein content makes lentils a perfect option for those looking to boost their protein intake. They are naturally gluten-free, making them a delicious staple in a gluten-free kitchen. Their exceptionally low glycemic index (low GI) values and resistant starch content make them suitable for a diabetic diet.Protein
Did you know? When combined with a whole grain, lentils provide the same quality protein as meat!
Lentils are good source of protein. A ½ cup serving of cooked lentils provides about 12 grams of protein. With such high protein content, you are sure to be fuelled up all day long.Fiber
Did you know? Just 1/2 cup of cooked green lentils packs in 32% of your days’ worth of fiber!
Lentils are an excellent source of fibre. In addition to gut mobility, dietary fiber is well known for many health benefits. Notably, high intake of fibre is associated with lower blood cholesterol levels and protection against developing colon cancer and Type 2 diabetes.Potassium
Did you know? Just 1/2 cup of cooked split red lentils has 273 mg of potassium!
We are so driven to reduce salt that sometimes we forget to look at the other half of the equation: getting enough potassium. Potassium can counteract the damaging effect of sodium and has been shown to lower blood pressure.Folate
Did you know? Out of all plant-based foods, lentils contain the most folate!
Lentils are an excellent source of folate. A type of B-vitamin, folate helps support red blood cell formation and proper nerve functions. Folate also plays an important role in lowering artery-damaging homocysteine. In addition, the water-soluble vitamin may help prevent anemia and protect against developing heart disease, cancer, and dementia. Folate is particularly important for women of childbearing age, as it is needed to support increasing maternal blood volume.
Iron
Did you know? Just 1/2 cup of cooked lentils provides 15% of your daily iron needs!
Iron plays an integral role in the formation of hemoglobin in blood and hemoglobin in the muscles, both of which carry oxygen to the cells. That is why fatigue and tiredness are usually the first symptoms people notice when they are low in iron. For vegetarians, getting enough iron particularly challenging. Regularly including lentils in your diet can help boost your iron intake.
Manganese
Lentils are a very good source of manganese. This mineral is stored mainly in our bones and in major organs including the liver, kidney, and pancreas. Manganese plays a role in maintaining normal blood sugar level, and helps protect against free-radical damage.

home remedy for phlegm: clean and finely chop a small onion. Place this in a bowl along with a teaspoon of grated ginger and two spoons of sugar. Toss the mixture well and then keep it aside for 20 minutes. You will find that the tonic is sweet and does not have the pungent taste and aroma of onions. Onions and garlic are rich in several compounds that act as natural antibiotics . This tonic helps to bolster the immune system and helps to increase the fluidity of the phlegm and allows it to be easily expelled from the body. The tonic also helps to soothe the throat which makes it especially effective in treating a sore throat.
home remedies to reduce dark circles
Buy a box of regular, old fashioned unflavored gelatin (e.g. Knox) from grocery store. Take a small cup or bowl and put in 1 teaspoon of the gelatin mix. Add one tablespoon of warm water & stir for a minute. Test it on your wrist to make sure it is not hot. Then, using a cotton ball, pat it under your eyes as you would an eye cream or gel... lie down and let it stay on for 30 minutes. Then just rinse it off. Gelatin is very high in Vitamin K & Biotin... do it daily for a week, and then 2-3 times a week, you should notice a reduction in dark circles.

Garlic is used for many conditions related to the heart and blood system. These conditions include high blood pressure, high cholesterol, coronary heart disease, heart attack, and “hardening of the arteries” (atherosclerosis). Some of these uses are supported by science. Garlic actually may be effective in slowing the development of atherosclerosis and seems to be able to modestly reduce blood pressure.
Garlic has been tried for treating an enlarged prostate (benign prostatic hyperplasia; BPH), diabetes, osteoarthritis, hay fever (allergic rhinitis), traveler's diarrhea, high blood pressure late in pregnancy (pre-eclampsia), cold and flu. It is also used for building the immune system, preventing tick bites, and preventing and treating bacterial and fungal infections.
Other uses include treatment of fever, coughs, headache, stomach ache, sinus congestion, gout, rheumatism, hemorrhoids, asthma, bronchitis, shortness of breath, low blood pressure, low blood sugar, high blood sugar, and snakebites. It is also used for fighting stress and fatigue, and maintaining healthy liver function.
Some people apply garlic oil to their skin to treat fungal infections, warts, and corns. There is some evidence supporting the topical use of garlic for fungal infections like ringworm, jock itch, and athlete’s foot; but the effectiveness of garlic against warts and corns is still uncertain.
While garlic is a common flavoring in food, some scientists have suggested that it might have a role as a food additive to prevent food poisoning. There is some evidence that fresh garlic, but not aged garlic, can kill certain bacteria such as E. coli, antibiotic-resistant Staphylococcus aureus, and Salmonella enteritidis in the laboratory.
How does it work?Garlic produces a chemical called allicin. This is what seems to make garlic work for certain conditions. Allicin also makes garlic smell. Some products are made “odorless” by aging the garlic, but this process can also make the garlic less effective. It’s a good idea to look for supplements that are coated (enteric coating) so they will dissolve in the intestine and not in the stomach.”
an Italian thrifty menu
I start the week with a full of nutrients minestrone soup (sauté anions with couple of sausages optional, add potatoes, carrots cut in pieces…add water, bring to a boil and add rice, spinach or other green and beans if use a can rinse it.Cookt at mod.temp. for 1 H. + -) that will last 2 days or it can be freezed for the end of the week supper. A bag of navy beans can be cooked all together) overnight in a crockpot) and then used for the soups or with pasta or rice… and freeze leftover for later use. Lentils soup is thrifty too, full of nutrients and fast to cook. In the middle of week I‘d cook a big pan of homemade tomato sauce made with 1 can of tomato puree and 1 can of water, if no time to make meatballs, sauté Italian sausage and then add the tomato. They give a nice flavor to the homemade sauce more wholesome than the one store ready. The leftover sauce can be freezed too or used to flavor soups. For the weekend a whole chicken will be more economic than chicken pieces and it can provide 2 meals. The leftover can be used for a chicken pot pie.

tips on food storage
Tomatoes: Do not refrigerate tomatoes. Tomatoes will lose their sweet, sugary flavor if stored in the refrigerator. You can keep them right on your counter in a colander.
Potatoes and onions: These items are best kept apart... keep both in a dry, dark area, like the pantry, but in separated areas.
Coffee: It's tempting to store coffee in the refrigerator or freezer, but the roasted coffee beans are being exposed to water. You'll lose flavor with the condensation that forms on the beans. Keep coffee in the original packaging at room temperature and use it within 7-14 days.
Bread: Classic sliced bread from the store can be stored at room temperature, because it has enough stabilizers. Sprouted breads are a different story. Sprouted breads release natural oils, making the bread go rancid quickly. Keep these loaves in the refrigerator.
